Ingredients for vegan chocolate protein pudding: Silken tofu, semi sweet chocolate chips, cocoa powder, coconut cream, maple syrup, instant coffee, salt.

How to make chocolate tofu pudding

Using your microwave or the double-boiler method on your stove, melt the chocolate chips. Set aside.

In a blender or food processor, add all your other ingredients.

Then pour the melted chocolate in.

Blend until very smooth, scraping down the sides if necessary and adding a splash of plant-based milk if your machine has trouble blending.

Protein pudding tastes best when it’s freshly made, so I do recommend making these the day of if possible. If you would like to meal prep them, these last 3 days in the fridge. Just grab one when you’re ready to serve, and add the toppings!
