Made with shredded green cabbage, kale, red cabbage, carrots, green onions, mandarin oranges, crunchy chow mein noodles, and the best dressing this CHOPPED ASIAN SALAD is always a hit in our home. Acting as a great meal, works well as a side dish for parties and barbecues. However you decide to serve it, make sure you get a big helping before it’s gone!

The other week I was making dinner so I just threw this together, added some grilled teriyaki chicken breast and viola one of my favorite salads was created and not even intentionally. I love it when things like that happen, don’t you?

The base of this salad is made by finely shredding kale. I just chop it with a knife, but you can use a mandoline, shredder or food processor if you prefer. You could buy some of the ingredients like the carrots, red and green cabbage pre-shredded if you prefer. Feel free to add in some leafy green lettuce or romaine to this salad too, I promise you couldn’t mess this up if you tried.

The most time-consuming part of the dressing is peeling and grating the ginger, which takes about 2 minutes total. I use a metal spoon to peel of the papery skin and a microplane grater to grate it. Then, it’s simply a matter of adding all of the dressing ingredients to a small jar, shaking things up, and pouring it on.

Ingredients 

Asian Chopped Salad

  • 3 cups chopped kale
  • 3 carrots (sliced thinly)
  • 1 ½ cup broccoli slaw
  • 1 cup red cabbage (diced)
  • 4 green onions (chopped)
  • 1 cup cilantro (coarsely chopped)
  • 1 cup canned mandarin oranges (drained)
  • 2 cups fried chow mein noodles

Sesame Ginger Salad Dressing

  • 2 tbsp avocado oil (or any neutral tasting vegetable oil)
  • 1 tsp sesame oil
  • juice of 1/2 lime (about 1 tbsp)
  • 2 tbsp rice vinegar
  • 1 tsp soy sauce
  • 2 tsp ginger (grated)
  • 1/2 tbsp maple syrup
  • 1/2 tsp sriracha
  • salt & pepper to taste

Instructions

Asian Chopped Salad

  • Mix all the salad ingredients together in a large bowl. Top with mandarin oranges and fried chow mein noodles.

Sesame Ginger Salad Dressing

  • Mix all the salad dressing ingredients in a mason jar, place the lid on and shake until well combined. I like to let it sit for a couple of hours in the fridge before, but it is good either way. 

Notes

Be generous with the lime juice and adjust the siracha to the heat you like.
