Winter Salad Ingredients
Making salads in the winter requires seasonal fruits and vegetables.
To make the winter salad you will need:
- Mixed salad greens
- Grapefruit,
- Naval oranges
- Crumbled feta cheese
- Dried figs, diced
- Roasted pistachios

To make the citrus salad dressing you will need
- Olive oil
- Orange juice
- Rice vinegar
- Honey (or maple syrup)
- Salt and black pepper, to taste

How to make a citrus winter salad
Step 1: Place the salad greens into a large serving bowl or individual bowls. Top the greens with the grapefruit, oranges, feta cheese, figs, and pistachios.

Step2: In a small jar or bowl, add the ingredients for the dressing. Seal and shake or whisk until well combined.

Step 3: Prior serving, drizzle the dressing over the salad and toss to coat.

Substitution ideas
While this is the complete opposite of vegan, this salad is also very tasty with cooked bacon :).
How to make this salad vegan
- Use maple syrup instead of honey in the dressing
- Instead of feta cheese, use Tofu cheese. Tofu makes a fantastic vegan substitute for feta cheese, offering a low fat, high protein alternative that’s as healthy as it is delicious.
How to store this salad
The citrus salad dressing can be stored in an air-tight container such as a mason jar for up to 5 days. The salad unfortunately should only be assembled just prior to serving as it does not keep well once the dressing is on it. You can prep the ingredients ahead of time and keep them in separate containers.

For the winter salad:
- 1 5 ounce package mixed salad greens
- 1 grapefruit (peeled and sectioned)
- 2 naval oranges (peeled and sectioned)
